StreetXO Takes Ibiza by Storm: Dabiz Muñoz Turns the Island into UniverXO’s New Global Laboratory

The world’s most disruptive chef has chosen Ibiza and the Palladium Hotel Group to accelerate the international expansion of his fine-dining street food concept in the summer of 2026.

Ibiza is once again becoming the stage for major trends in contemporary luxury. This time, it is not music or fashion that sets the tone, but gastronomy. Dabiz Muñoz has confirmed the opening of StreetXO Ibiza, a new location for his most expansive concept, which will arrive on the island in June 2026 and reinforces a clear idea: UniverXO is no longer just a gastronomic group; it is a global creative platform.

The announcement, made by the chef himself on social media in a tone that was as direct as it was provocative—“incredibly wild and epic,” “2026 is going to be absolutely insane”—is not just a statement of intent. It confirms that StreetXO is establishing itself as the brand with which Muñoz aims to conquer the world, following Madrid and Dubai, and after the closure of his London venture during the pandemic.

Ibiza as a strategic destination, not a random choice

The choice of Ibiza is no accident. StreetXO Ibiza will open its doors at The Unexpected Ibiza Hotel, the Palladium Hotel Group property located in Platja d’en Bossa, one of the most desirable destinations in the Mediterranean. A hotel that has already demonstrated its commitment to signature cuisine with the previous addition of Gordon Ramsay’s Hell’s Kitchen, and which is now reinforcing its position as a hub for high-impact dining experiences.

For Dabiz Muñoz, the island embodies the values that define his cuisine: energy, freedom, a mix of cultures, and unapologetic hedonism. “Ibiza is one of the most aspirational places in the world,” said the chef, who sees the island as the next logical step after Dubai for a concept designed to travel, adapt, and expand.

StreetXO: UniverXO’s growth engine

Since its inception in 2012 as a rogue bar at El Corte Inglés in Callao, StreetXO has evolved to become the international spearhead of UniverXO. Its journey—Callao, Serrano, Dubai, and now Ibiza—reflects a clear strategy: to bring Dabiz Muñoz’s extreme creativity to formats that are more flexible, replicable, and aligned with experiential luxury.

StreetXO is part of the UniverXO ecosystem alongside DiverXO (three Michelin stars), RavioXO (one Michelin star), GoXO (delivery and food trucks), and Hungry Club (airports), but it is the concept that best translates Muñoz’s cuisine into a universal language. A form of “high-end street cuisine” that blends cutting-edge techniques with influences from Asian, Latin American, and European street food, served at open counters, without rules, and presented as a culinary spectacle.

A global alleyway in the heart of Ibiza

The StreetXO Ibiza concept will remain true to its roots: a central bar, an open kitchen, and iconic dishes such as Korean wonton lasagna with aged beef, XO ramen with foie gras and Iberian ham, and soft-shell crab chili. But the Ibizan setting adds a new layer of meaning: StreetXO is part of a destination where luxury is not just a product, but an experience, an emotion, and a story.

Sources at UniverXO describe the space as “an alleyway transported from anywhere in the world,” a metaphor that fits contemporary Ibiza: international, ever-changing, and constantly connected to global trends.

Palladium and UniverXO: A Partnership for Experiential Luxury

For Palladium Hotel Group, owned by Grupo Empresas Matutes, the partnership with Dabiz Muñoz reinforces a clear strategy of differentiation. With more than 40 hotels and 13,000 rooms across eight countries, the group is committed to integrating signature culinary concepts that serve as true draws for guests.

StreetXO Ibiza isn’t just another opening—it’s a key player in the race to lead the experiential luxury sector, where gastronomy, hospitality, and entertainment come together to attract a global audience seeking more than just a place to stay.

2026 Will Be a Pivotal Year for Dabiz Muñoz

While DiverXO will remain in its current location until at least December 2027, Dabiz Muñoz’s creative and expansive focus is clearly shifting toward StreetXO. Ibiza marks the start of a year that the chef himself describes as “inexplicable,” with a team he considers “the best in the world” and an ambition with no apparent limits.

StreetXO Ibiza isn’t just a restaurant. It’s a manifesto. A declaration that cuisine can be a spectacle, a global business, and a cultural language all at once. And that Dabiz Muñoz remains determined to compete—and win—in the top tier of international creative luxury.
