There are culinary experiences whose appeal lies as much in what happens on the plate as in the context that makes them possible. Next Monday, October 26, Forbes House—the headquarters of Forbes Spain on O’Donnell Street in Madrid—will host a new edition of Chef’s Table + Wine Night, featuring the Mallorcan restaurant Ritma and the Italian winery Ca’ del Bosco. An evening that will bring together two distinct worlds, each with its own personality: signature cuisine open to diverse influences and a selection of wines that places Franciacorta at the heart of the experience.

Marcos Servera will lead the event; he will travel from Mallorca with his entire team to temporarily bring the cuisine of Ritma—located in the town of Fornalutx, in the heart of the Serra de Tramuntana—to the capital. The event will take the form of a pop-up, centered around a single table with very limited seating, as part of a commitment to gastronomy understood as an intimate, personalized experience designed specifically for the occasion.

The event is part of Forbes House Chef’s Table, the culinary series launched in October 2025 through which Forbes House expanded its range of experiences for members and guests. The concept is based on a single idea: to transform the club’s evenings into culinary journeys through Spain, bringing to the table chefs and restaurants with their own distinct identities and offerings recognized for their excellence.

In its original concept, each event was conceived as a collaboration between a guest chef and Adolfo Santos, executive chef at Forbes House, with the goal of creating unique menus that would connect each restaurant’s culinary vision with the house’s cuisine. Beyond the dinner itself, the series was created with the goal of introducing diners to the chefs’ philosophy, exploring new culinary concepts, and rounding out the experience with exclusive pairings.

The evening with Ritma and Ca’ del Bosco embodies that spirit of collaboration and discovery, with the added dimension of wine that takes the experience beyond the kitchen.

Ritma: A Balearic Identity Open to the Atlantic and Mexico

Ritma’s concept is rooted in an identity that the team itself defines as Atlantic-Mediterranean. The Mediterranean serves as its starting point, but Marcos Servera’s cuisine incorporates influences from other regions—from Galicia to Mexico—in a blend that seeks to broaden its horizons without losing sight of its island roots.

The menu will feature rice and seafood as its main attractions, along with dishes such as tacos and croquettes. Different culinary traditions will thus come together in a concept that promises some surprises and reflects a contemporary approach to cooking: drawing inspiration from the region, but without letting it become a creative limitation.

The team’s temporary move to Madrid will allow them to explore this identity in a setting different from their usual one. The single-table format adds a special dimension to the experience by focusing attention on the menu, the pace of service, and the relationship between the dishes and the wines chosen to pair with them.

At a time when dining experiences seek to set themselves apart both through their culinary offerings and the way they are enjoyed, Ritma’s presence at Forbes House shines a spotlight on the emerging talent from Mallorca and its ability to project a distinct identity beyond the island.

Ca’ del Bosco: The World of Franciacorta in a Glass

The event will begin with a Wine Night, during which attendees will be able to sample several Ca’ del Bosco wines as an appetizer before moving on to the meal. The selection will include Franciacorta sparkling wines and still wines made from varieties such as Chardonnay and Pinot Noir, offering a broader view of the winery’s winemaking universe.

Located in Lombardy, in northern Italy, Franciacorta is one of Europe’s leading wine regions for the production of sparkling wines using the traditional method, with a second fermentation in the bottle. Ca’ del Bosco has helped cement the region’s prestige through an approach to viticulture and winemaking characterized by precision and a commitment to quality.

The various selections will allow you to explore different styles and nuances: from the freshness and complexity of sparkling wines to the character of still wines. This diversity opens up pairing possibilities with a cuisine in which seafood, rice, and international influences will play a prominent role.

The concept positions wine as an essential part of the gastronomic experience. It is not merely about pairing each dish, but about exploring how the characteristics of each dish can interact with the acidity, texture, aromas, and intensity of the wines. Much of the appeal of an experience designed to enjoy cuisine and oenology as complementary disciplines lies in this interaction.

The Luxury of the One-of-a-Kind

The exclusivity of this edition will be defined by its ephemeral nature, the limited capacity, and a menu created for a single night. The Chef’s Table format reflects a vision of premium gastronomy in which uniqueness depends not only on ingredients or techniques, but also on the setting and the opportunity to enjoy a shared experience on a small scale.

At Forbes House, the event will bring together three distinct elements: the cuisine of Marcos Servera and Ritma, the wine culture of Ca’ del Bosco, and a space that will be temporarily transformed into a culinary venue. The collaboration also connects two regions that share common ground in their products, origins, and pursuit of quality.

On October 26, Madrid will be the setting for a cuisine that looks to the Atlantic without losing its Mediterranean roots, and for a winery that has made Franciacorta wines one of the defining hallmarks of Italian winemaking. This new Forbes House Chef’s Table event celebrates the value of taking one’s time at the table, discovering new culinary perspectives, and letting food and wine come together to create a unique experience.
