Dabiz Muñoz brings culinary innovation to the island with StreetXO

It was only a matter of time before Dabiz Muñoz opened a restaurant in Ibiza. “Ibiza is made for StreetXO and StreetXO is made for Ibiza. The world’s best chef brings his haute cuisine to the island, dancing and letting loose in front of the sea. A hedonistic paradise where Dabiz Muñoz has just arrived with a concept that will also revolutionize Ibiza, located inside the IBIZA Gallery, opposite the endless party of The Unexpected Ibiza Hotel.

His univerXO has become part of The Site Ibiza‘s culinary center – part of the Palladium Hotel Group – with a StreetXO that, while replicating the Madrid restaurant in concept and essence, vibrantly connects with the island – and its ingredients – amid an extravaganza of street food where you can let yourself go at every turn.

A roller coaster with no brakes

Amidst neon lights, graffiti, and an endless array of sensory stimuli that transport us to the decadent, glittering streets of Asia, StreetXO Ibiza revolves around a red-clad open kitchen, where its team of chefs cooks to the pulsating rhythm of electronic music. In perfect sync and with boundless energy, they gather to collectively create and serve Dabiz’s explosive and radical flavors from the counter.

On this ‘out-of-control roller coaster’ – where the fun began on June 1 – nothing seems to be planned, despite its creator’s obsession with perfection. Because its punk spirit endures.

In addition to the open kitchen or ‘Food Bar, the venue features a large terrace to enjoy the party, and its legendary cocktail bar called ‘AISH,’ which exudes the same creative madness and welcomes guests with its liquid cuisine. With innovative cocktails that combine unexpected ingredients, such as the Spicy Margarita with mezcal, triple sec, and lime, and a shrub made with Josper-smoked chilies, the DiverXO Líquido Madrizzzz 100%, the Blood XO, or the Huevo de La Pedroche.

Dabiz Muñoz’s subversive manifesto, “avant-garde or die, is interpreted here through the lens of street food, with a creative concept that once again breaks with convention – and which we were able to taste firsthand at its opening on the night of June 11. “We’ve let our imagination run wild and StreetXO Ibiza is more innovative than ever,” says Dabiz.

The menu includes some of the chef’s most iconic street food dishes, such as the Peking dumpling, La Pedroche croquette nigiri, octopus taco, and kebab bun cha, through which he surprisingly conveys his travels through Asia. This is also evident in his ‘maíz de fira,’ one of the new additions to StreetXO, which can be paired with other sublime dishes like the chifa-style tiradito of grilled Japanese bonito, and is complemented by his selection of experimental desserts. From a liquid peanut soufflé with chocolate and toasted chili to the ‘Brioche Pedroche’ with Madagascar vanilla cream, which he dedicates once again to the love of his life.
