Here at Tapas, we want to recommend some of the most interesting wines to drink in Ibiza and Formentera this season (and throughout the rest of the year).

Organic Malvasía and Chardonnay from the two Can Rich estates, under the technical supervision of Álvaro Pérez. Vines are located between the island’s limestone interior and the Ses Salines coast, with the Mediterranean always nearby. Hand-harvested, fermented at low temperatures. Fresh and aromatic. The spirit of the island in a bottle. Price: 12.50 euros

The winery’s flagship wine, made by winemaker David Lorenzo with Monastrell grapes grown in clay and limestone soils. Fermented in stainless steel, with 10% aging in French oak, and matured on its lees. Pale salmon-pink color with golden highlights; floral aromas; fresh and saline. The undisputed benchmark for rosé in the Pitiüses.

Totem 2020

Produced only in exceptional years. A single-vineyard red wine from Sant Agustí made with ungrafted Monastrell, with vines between eighty and one hundred years old, featuring ancient and heterogeneous genetics. Aromas of black fruit, sage, and pepper. Polished tannins, with a long, mineral finish. The deepest expression of Ibiza in the glass. Price: 48 euros

Francesc Grimalt and Sergio Caballero—an oenologist and a musician, respectively, and the founder of Sónar—were born in Mallorca, where they started making wine in a friend’s garage. The 2023 vintage is a blend of Fogoneu, Syrah, and Cabernet Sauvignon, aged for eight months in French oak barrels. Smooth and fruity. A red wine that recharges your batteries, just as its name promises. Price: 20 euros

Viognier and Malvasía from the organic vineyards of La Mola in Formentera, cultivated in calcareous limy soils and with full sun exposure. José Abalde produces this white wine using cold maceration and slow fermentation of each variety separately. Pale lemon yellow in color, with aromas of tropical fruit, citrus notes, and an immaculate freshness that fills the mouth. Price: 25 euros
